Ingredients
  

Base:

  • 2 cups quick oats
  • ½ cup unsweetened shredded coconut optional
  • ½ cup unsalted butter or coconut oil for dairy-free
  • ¾ cup granulated sugar or maple syrup
  • ¼ cup milk dairy or non-dairy
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • Pinch of salt

Optional Add-Ins:

  • ¼ cup white chocolate chips
  • 1 tbsp chia seeds or ground flaxseed

Lemon glaze (powdered sugar + lemon juice)

  • 1/3 cup powdered sugar optional
  • 1–2 tsp lemon juice optional

Instructions
 

Prepare Tray:

  • Line a baking sheet with parchment paper and set aside.

Make Lemon Syrup:

  • In a medium saucepan over medium heat, combine butter, sugar, milk, lemon juice, and lemon zest. Stir continuously and bring to a rolling boil. Boil for exactly 1 minute.

Mix Dry Ingredients:

  • Remove from heat. Stir in oats, shredded coconut, vanilla, and salt. Mix until everything is fully coated and sticky.

Form Cookies:

  • Drop spoonfuls of the mixture onto the lined baking sheet using a spoon or cookie scoop. Flatten slightly if desired.

Chill and Set:

  • Let cookies cool at room temperature or refrigerate for 20–30 minutes until set. Drizzle with optional lemon glaze if using.

Notes

  • Quick oats work best for texture and consistency.
  • Adjust lemon zest to increase or decrease the citrus flavor.
  • Cookies will be softer at room temp and firmer if chilled.
  • For a vegan version, use coconut oil and plant-based milk.
  • Store in the fridge for best results.
